Keto Broccoli Pizza: A Flavorful Twist on Pizza Night!

  • 3 eggs

  • 2 cloves of garlic, chopped

  • Salt to taste

  • Olive oil or coconut oil for greasing

    o 1/3 cup olive oil

    o 1 large bunch of fresh basil leaves

    o Handful of parsley

    o 2 cloves of garlic

    o Salt to taste

    o Sliced tomatoes

    o Grated cheese (use your favorite keto-friendly cheese)

    Instructions:

    1. Prepare the Broccoli Base:

  • Using a food processor or blender, pulse the broccoli florets until they reach a rice-like consistency.

  • In a mixing bowl, combine the processed broccoli with eggs, chopped onion, garlic, oregano, and salt. Mix thoroughly.

    2. Create the Pizza Base:

  • Heat a heavy skillet and grease it with olive oil or coconut oil.

  • Spread the broccoli mixture evenly at the bottom of the skillet to form the pizza base.

    3.  Optional Pesto Layer:

  • For an extra burst of flavor, blend olive oil, basil leaves, parsley, garlic, and salt in a blender or food processor until it forms a green, flavorful paste.

  • Spread the pesto evenly over the broccoli base.

    4. Add Sliced Tomatoes:

  • Layer sliced tomatoes on top of the pesto layer.
